This Amaretto Cheesecake is rich, creamy, and bursting with almond flavor from Amaretto liqueur. Set on a buttery graham cracker crust and topped with whipped cream and toasted almonds, it’s a show-stopping dessert that’s both elegant and irresistibly smooth.
Ingredients
For the crust:
1 1/2 cups graham cracker crumbs
1/3 cup melted butter
1/4 cup granulated sugar
For the filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1/2 cup sour cream
1/4 cup Amaretto liqueur
1 tsp almond extract
1 tsp vanilla extract
2 tbsp all-purpose flour
For the topping (optional):
Whipped cream
Toasted sliced almonds
Fresh raspberries or cherries
Instructions
1. Preheat oven to 325°F (160°C).
2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside.
3. In a large mixing bowl, beat cream cheese and sugar until smooth.
4. Add eggs one at a time, mixing just until incorporated.
5. Blend in sour cream, Amaretto, almond extract, vanilla extract, and flour until smooth.
6. Pour the filling over the cooled crust.
7. Bake for 55–65 minutes, until the center is almost set but still slightly jiggly.
8. Turn off the oven, crack the door, and let cheesecake cool slowly for 1 hour.
9. Refrigerate at least 4 hours or overnight before serving.
10. Top with whipped cream, toasted almonds, and fresh berries if desired.
Notes
Add 1/4 cup finely ground almonds to the crust for extra almond flavor.
To prevent cracking, bake in a water bath or place a pan of water on the oven’s lower rack.
This cheesecake freezes beautifully — wrap tightly and store up to 3 months.
For a stronger almond flavor, increase Amaretto to 1/3 cup.
