Ingredients
1 cup cottage cheese
2 large eggs

1 tsp baking powder
1/2 tsp baking soda

1 small apple, peeled and grated
1 tsp vanilla extract

Instructions
1. Whisk together cottage cheese, eggs, and vanilla.
2. Mix flour, baking powder, baking soda, salt, and cinnamon in another bowl.
3. Fold dry ingredients into wet until just combined.
4. Stir in grated apple.
5. Heat skillet or griddle and lightly grease.
6. Pour 1/4 cup batter per pancake, cook until bubbles form, then flip until golden.
