Description
A cozy fall loaf packed with apples, oats, and warm spices.
Ingredients
2 cups rolled oats
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
2 eggs
½ cup olive oil
½ cup unsweetened applesauce
½ cup brown sugar
2 cups chopped apples
1 tbsp maple syrup
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C).
2. Grease and line a loaf pan.
3. Mix dry ingredients in a bowl.
4. Whisk wet ingredients in another bowl.
5. Combine wet and dry until just mixed.
6. Fold in apples and oats.
7. Pour into loaf pan.
8. Bake 50–60 minutes.
9. Cool before slicing.
Notes
Store in airtight container 3 days.
Freeze slices for 2 months.
Great toasted with butter or nut butter.
