A light and refreshing Asian-inspired chicken salad packed with shredded chicken, crunchy cabbage, sweet dried cranberries, toasted almonds, and a tangy sesame dressing perfect for lunch or a quick dinner.
Ingredients
3 cups cooked shredded chicken
4 cups shredded napa cabbage (or coleslaw mix)
1 cup shredded carrots
1/2 cup sliced green onions
1/2 cup dried cranberries
1/3 cup sliced almonds, toasted
2 tbsp sesame seeds (optional)
1/4 cup rice vinegar
3 tbsp soy sauce
2 tbsp honey
1 tbsp sesame oil
1/4 cup olive oil
1 tsp grated fresh ginger
Salt and pepper to taste
Instructions
1. In a large bowl, combine shredded chicken, cabbage, carrots, green onions, cranberries, almonds, and sesame seeds.
2. In a separate small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, olive oil, ginger, salt, and pepper until smooth.
3. Pour dressing over the salad and toss well to coat all ingredients evenly.
4. Let the salad sit for 10 minutes to allow flavors to meld.
5. Serve chilled or at room temperature for best taste.
6. Garnish with extra sesame seeds or green onions before serving.
Notes
Use rotisserie chicken for quick prep.
Add mandarin oranges or edamame for extra flavor and color.
This salad keeps well in the fridge for up to 2 days — just store dressing separately to maintain crunch.
