1 bunch fresh asparagus, trimmed and cut into 1-inch pieces

1/2 small onion, finely diced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie dish or quiche pan.

2. Heat olive oil in a skillet over medium heat. Add the diced onion and cook until soft, about 3 minutes.

3. Add the asparagus pieces and sauté for 3–4 minutes until just tender. Remove from heat.

4. In a large mixing bowl, whisk together eggs, cottage cheese, milk, mozzarella, Parmesan, salt, pepper, and garlic powder.
