Ingredients
4 boneless, skinless chicken breasts
12 asparagus spears, trimmed
1/2 cup shredded mozzarella cheese
1/4 cup sun-dried tomatoes, chopped
1 tsp garlic powder
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper, to taste
2 tbsp olive oil
Toothpicks (for securing)
Instructions
1. Preheat oven to 400°F (200°C).
2. Slice a pocket into each chicken breast, being careful not to cut all the way through.
3. Season the chicken inside and out with garlic powder, paprika, Italian seasoning, salt, and pepper.
4. Stuff each chicken breast with 3 asparagus spears, a spoonful of sun-dried tomatoes, and a sprinkle of mozzarella.
5. Secure the openings with toothpicks.
6. Heat olive oil in an oven-safe skillet over medium-high heat.
7. Sear the chicken for 3–4 minutes per side until golden brown.
8. Transfer the skillet to the oven and bake for 10–12 minutes, or until the chicken is fully cooked (internal temperature 165°F).
9. Remove toothpicks, rest for 5 minutes, and serve warm.
Notes
Try adding a slice of prosciutto inside each chicken breast for extra flavor.
Serve with a side of mashed cauliflower or a simple green salad for a balanced meal.
Use provolone or Swiss cheese instead of mozzarella for a different twist.
