Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 23 Scotch bonnet peppers, chopped
  • 2 cups chicken stock
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Sauté the chopped onion for about 3-4 minutes until soft.
  3. Add the minced garlic and cook for an additional minute, stirring frequently.
  4. Stir in the curry powder and allspice, cooking for another minute.
  5. Brown the chicken pieces for about 5-7 minutes until colored on all sides.
  6. Pour in the chicken stock and bring to a gentle simmer.
  7. Simmer gently for about 30 minutes with the pot covered.
  8. Incorporate the coconut milk and Scotch bonnet peppers, simmering for an additional 15-20 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot with rice, roti, or your preferred side dish.
