- 2 lbs chicken, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 2–3 Scotch bonnet peppers, chopped
- 2 cups chicken stock
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 teaspoon allspice
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Sauté the chopped onion for about 3-4 minutes until soft.
- Add the minced garlic and cook for an additional minute, stirring frequently.
- Stir in the curry powder and allspice, cooking for another minute.
- Brown the chicken pieces for about 5-7 minutes until colored on all sides.
- Pour in the chicken stock and bring to a gentle simmer.
- Simmer gently for about 30 minutes with the pot covered.
- Incorporate the coconut milk and Scotch bonnet peppers, simmering for an additional 15-20 minutes.
- Season with salt and pepper to taste.
- Serve hot with rice, roti, or your preferred side dish.

For a vegetarian version, replace chicken with chickpeas or your choice of vegetables.
