Description

Autumn Butternut Squash Sausage Bake is a cozy, hearty dish filled with roasted butternut squash, savory sausage, caramelized onions, and herbs  all baked together for the perfect fall comfort meal.


Ingredients

1 medium butternut squash, peeled and cubed (about 5 cups)

1 lb Italian sausage (mild or spicy)

1 red onion, sliced

2 tbsp olive oil

1 tsp garlic powder

1 tsp dried thyme

1 tsp dried sage

1/2 tsp salt

1/4 tsp black pepper

1/2 cup shredded mozzarella cheese (optional)

Fresh parsley for garnish


Instructions

1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

2. Spread the cubed butternut squash and sliced onion on the baking dish. Drizzle with olive oil and sprinkle with garlic powder, thyme, sage, salt, and pepper. Toss to coat evenly.

3. Bake for 20 minutes, stirring halfway through.

4. Meanwhile, cook sausage in a skillet over medium heat until browned and cooked through. Drain any excess fat.

5. Remove the baking dish from the oven and add the cooked sausage to the squash mixture. Stir to combine.

6. Top with shredded mozzarella cheese if using.

7. Return to the oven and bake for another 10–15 minutes, or until the squash is tender and the cheese is melted and bubbly.

8. Garnish with fresh parsley before serving.

Notes

Try adding chopped apples or cranberries for a sweet and savory twist.

Substitute turkey sausage for a lighter option.

Serve as a main dish or alongside a fresh green salad for a complete meal.
