Description

A refreshing and nutritious salad combining creamy avocados with hearty black beans, making it perfect for warm weather as a meal or side dish.


Ingredients

  • Zest of 1/2 a lime (about 1 teaspoon)
  • 1/4 teaspoon cumin
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 avocados (diced)
  • 1 large tomato (diced)
  • ¾ cup sweet onion (finely diced)
  • 15-ounce can black beans (drained and rinsed)
  • ¼ cup cilantro (chopped)

Instructions

  1. Prepare the dressing by whisking together lime juice, lime zest, cumin, minced garlic, olive oil, and a pinch of salt and pepper in a small mixing bowl.
  2. Combine the salad ingredients in a larger bowl, gently adding diced avocados, tomato, sweet onion, black beans, and cilantro.
  3. Dress the salad by pouring the prepared dressing over the mixed ingredients and gently tossing everything together.
  4. Serve the salad immediately for the freshest taste, or refrigerate for about 30 minutes to allow flavors to meld.

Notes
