Description

A vibrant and refreshing salsa bursting with creamy avocado, sweet corn, hearty black beans, and zesty lime  perfect as a dip, topping, or side for grilled meats and tacos.


Ingredients

2 ripe avocados, diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1/4 cup red onion, finely chopped

1 jalapeño, minced (optional)

1/4 cup fresh cilantro, chopped

2 tbsp olive oil

2 tbsp lime juice (freshly squeezed)

1/2 tsp cumin

Salt and pepper to taste


Instructions

1. In a large bowl, combine black beans, corn, bell pepper, red onion, jalapeño, and cilantro.

2. Add diced avocado to the bowl.

3. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.

4. Pour dressing over the salsa mixture and gently toss to combine.

5. Taste and adjust seasoning if needed.

6. Chill for at least 20 minutes before serving for best flavor.

7. Serve with tortilla chips or as a topping for tacos, grilled chicken, or fish.

Notes

For extra freshness, add diced mango or tomatoes.
