Ingredients
1 boneless skinless chicken breast, thinly sliced
2 tablespoons olive oil
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon ground cumin
Salt and black pepper, to taste
1/4 cup diced onion
1 clove garlic, minced
1 cup baby spinach
1/2 cup cherry tomatoes, halved
3 large eggs
1/3 cup crumbled feta cheese
Instructions
1. Preheat the oven to 375°F (190°C).
2. Pat the chicken breast dry and season it with garlic powder, paprika, cumin, salt, and pepper.
3. Heat 1 tablespoon of olive oil in an oven-safe skillet over medium heat.
4. Sear the chicken breast for 2–3 minutes per side until lightly golden.
5. Add remaining olive oil, then sauté diced onion and minced garlic until fragrant.
6. Add baby spinach and cherry tomatoes; cook until wilted.
7. Make small wells in the pan and crack in the eggs.
8. Sprinkle crumbled feta evenly across the pan.
9. Transfer the skillet to the oven and bake for 10–12 minutes until egg whites are set.
10. Remove from oven and let rest for 3 minutes before serving.
Notes
You can substitute ground chicken for a minced version.
Use kale instead of spinach for a sturdier green.
Add a pinch of red pepper flakes for a spicy variation.
