Description

Ingredients

  • 4 large eggs
  • 200g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine cherry tomatoes and fresh spinach in a small baking dish.
  3. Drizzle with olive oil and season with salt, pepper, and red pepper flakes.
  4. Crumble the feta cheese over the top of the mixture.
  5. Create four small wells and crack an egg into each.
  6. Bake for about 15-20 minutes until egg whites are set but yolks remain soft.
  7. Serve warm, optionally with toasted bread or a side salad.
