A creamy, tangy pasta dish baked with feta cheese and cherry tomatoes—simple, flavorful, and perfect for weeknights.
Ingredients
8 oz pasta (penne, rotini, or spaghetti)
1 block (8 oz) feta cheese
2 cups cherry tomatoes
3 cloves garlic, minced
2 tbsp olive oil
1/2 tsp red pepper flakes (optional)
Salt and pepper, to taste
Fresh basil, for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. Place feta block and cherry tomatoes in a baking dish. Drizzle with olive oil, add garlic, salt, pepper, and red pepper flakes.
3. Bake 25–30 minutes until tomatoes burst and feta is soft.
4. Cook pasta according to package instructions; drain.
5. Mash feta and tomatoes to create creamy sauce.
6. Toss pasta with sauce until evenly coated.
7. Garnish with fresh basil and serve warm.
Notes
Use good-quality feta for best flavor.
Can add spinach, zucchini, or other vegetables before baking.
Store leftovers in fridge and reheat gently.
