Fluffy, spiced, and baked to perfection, these vegan pumpkin spice donuts are the perfect fall treat.
Ingredients
1 cup pumpkin puree
3/4 cup brown sugar
1/2 cup plant-based milk
1/4 cup oil or applesauce
2 tsp pumpkin spice blend
1 tsp baking powder
1 tsp baking soda
1 1/2 cups flour
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C). Grease donut pan.
2. Mix pumpkin, sugar, milk, and oil.
3. Whisk flour, spices, baking powder, and baking soda.
4. Combine wet and dry ingredients without overmixing.
5. Pipe into donut pan, 3/4 full.
6. Bake 15–18 minutes until a toothpick comes out clean.
7. Cool in pan 5 minutes, then transfer to rack.
8. Glaze or dust with cinnamon sugar.
Notes
Store in airtight container for 2 days at room temp.
Freeze up to 2 months.
Best enjoyed slightly warm with glaze.
