Description
This Bang Bang Chicken Bowl is crispy, spicy, sweet, and totally satisfying. Crunchy fried chicken bites are drizzled with creamy chili sauce and served over rice with fresh toppings.
Ingredients
For the Chicken:
1 lb boneless, skinless chicken breasts, cut into bite-sized chunks
½ cup buttermilk (or milk with 1 tsp vinegar)
½ cup cornstarch
½ cup all-purpose flour
1 tsp garlic powder
½ tsp salt
Vegetable oil, for frying
For the Bang Bang Sauce:
½ cup mayonnaise
¼ cup sweet chili sauce
1 tablespoon sriracha (adjust to taste)
1 tablespoon honey or sugar
1 teaspoon rice vinegar or lime juice
For the Bowl:
2 cups cooked jasmine or basmati rice
1 cup shredded lettuce or cabbage
½ cup shredded carrots
¼ cup sliced green onions
1 tablespoon sesame seeds (optional)
Instructions
1. In a bowl, combine chicken and buttermilk. Marinate for at least 15 minutes.
2. In another bowl, whisk together cornstarch, flour, garlic powder, and salt.
3. Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat.
4. Dredge marinated chicken in the flour mixture, pressing to coat.
5. Fry chicken in batches for 4–5 minutes until golden and cooked through. Drain on paper towels.
6. In a small bowl, whisk together all sauce ingredients until smooth.
7. Assemble bowls with a base of rice, topped with crispy chicken, lettuce, carrots, and green onions.
8. Drizzle with bang bang sauce and sprinkle with sesame seeds.
9. Serve immediately.
Notes
Use an air fryer for a lighter version of the chicken.
Double the sauce—it’s great as a dip or salad dressing.
Add sliced avocado or cucumber for more crunch and creaminess.
