Description
One-skillet Beef Skillet Enchiladas with seasoned beef, tortillas, cheese, and sauce baked to perfection.
Ingredients
1 lb ground beef (80/20 blend)
8 tortillas
2 cups enchilada sauce
1 cup shredded cheddar
1 cup shredded Monterey Jack
1 onion, diced
2 garlic cloves, minced
2 tbsp olive oil
1 tsp cumin
1 tsp chili powder
1 tsp smoked paprika
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in skillet, sauté onion and garlic.
3. Add ground beef, season with spices, cook until browned.
4. Stir in half the enchilada sauce.
5. Layer tortillas, beef, cheese, and sauce in skillet.
6. Repeat layers, finishing with cheese and sauce.
7. Bake 15 minutes until cheese melts and bubbles.
8. Rest 5 minutes before serving, garnish with cilantro.
Notes
Use flour tortillas for softer texture, corn for authentic flavor.
Make ahead: assemble and refrigerate for up to 24 hours before baking.
