Description

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • Oil for frying
  • Shredded cheese (optional)
  • Sour cream and salsa for serving

Instructions

  1. Cook the beef: Start by heating a skillet over medium heat. Add the ground beef to the skillet. Use a wooden spoon to break up the meat as it cooks. Stir in the chopped onion and minced garlic. Cook until browned and onions are tender, about 5-7 minutes. Drain any excess fat.
  2. Season: Stir in cumin, chili powder, salt, and pepper. Mix well and let cool.
  3. Warm the tortillas in a dry skillet over medium heat until pliable.
  4. Assemble the taquitos: Take a warm tortilla, place about two tablespoons of beef mixture in the center. Optionally add cheese. Roll tightly, tucking in the ends.
  5. Heat the oil in a frying pan until hot (about 350°F/175°C).
  6. Fry the taquitos in batches until golden brown, about 2-3 minutes per side.
  7. Drain on paper towels and serve hot with sour cream and salsa.

Notes

For extra crunch, consider double frying or using shredded chicken for a variation.
