- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Corn tortillas
- Oil for frying
- Shredded cheese (optional)
- Sour cream and salsa for serving
Instructions
- Cook the beef: Start by heating a skillet over medium heat. Add the ground beef to the skillet. Use a wooden spoon to break up the meat as it cooks. Stir in the chopped onion and minced garlic. Cook until browned and onions are tender, about 5-7 minutes. Drain any excess fat.
- Season: Stir in cumin, chili powder, salt, and pepper. Mix well and let cool.
- Warm the tortillas in a dry skillet over medium heat until pliable.
- Assemble the taquitos: Take a warm tortilla, place about two tablespoons of beef mixture in the center. Optionally add cheese. Roll tightly, tucking in the ends.
- Heat the oil in a frying pan until hot (about 350°F/175°C).
- Fry the taquitos in batches until golden brown, about 2-3 minutes per side.
- Drain on paper towels and serve hot with sour cream and salsa.
Notes
For extra crunch, consider double frying or using shredded chicken for a variation.
