Ingredients
2 medium beets, roasted and pureed
1 1/2 cups all-purpose flour
1/2 cup almond flour
1/4 cup sugar
1 tsp baking powder
1/4 tsp salt
1/3 cup melted butter
1 tsp vanilla extract
4 oz cream cheese, softened
1/4 cup powdered sugar
1/2 tsp lemon zest
Fresh berries (strawberries, blueberries, raspberries)
Honey for drizzling
Mint leaves for garnish
Instructions
1. Preheat oven to 375°F (190°C) and line a pizza pan with parchment paper.
2. In a bowl, mix beet puree, melted butter, sugar, and vanilla until smooth.
3. Add flours, baking powder, and salt; stir until a soft dough forms.
4. Press dough evenly into a round pizza shape on the prepared pan.
5. Bake for 15–18 minutes until set and lightly golden; let cool completely.
6. In a small bowl, beat cream cheese, powdered sugar, and lemon zest until smooth.
7. Spread frosting evenly over cooled crust.
8. Top with fresh berries, drizzle with honey, garnish with mint, slice, and serve.
Notes
Roasting the beets enhances their natural sweetness and color.
You can substitute mascarpone for cream cheese for a richer topping.
