Ingredients

  • 1 cup rice (white or brown)
  • 1 pound sausage (smoked or spicy)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 2 cups broth (chicken or vegetable)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Add chopped onion and bell pepper; sauté until softened, about 4-5 minutes.
  3. Stir in minced garlic, cumin, and paprika; cook for 1 minute.
  4. Add sausage and break it up; cook until browned, about 5-7 minutes.
  5. Stir in black beans, rice, and broth; bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes.
  7. Check rice for doneness; season with salt and pepper to taste and serve hot.
