- 1 pound sausage (smoked or spicy)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 bell pepper (chopped)

- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a splash of olive oil in a large pot over medium heat.
- Add chopped onion and bell pepper; sauté until softened, about 4-5 minutes.
- Stir in minced garlic, cumin, and paprika; cook for 1 minute.
- Add sausage and break it up; cook until browned, about 5-7 minutes.
- Stir in black beans, rice, and broth; bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes.
- Check rice for doneness; season with salt and pepper to taste and serve hot.
