Description
A warm, bubbly blackberry cobbler with a golden, buttery crust and juicy, sweet-tart berries the perfect rustic dessert for summer or any cozy night in.
Ingredients
4 cups fresh or frozen blackberries
1 cup granulated sugar (divided)
1 tbsp lemon juice
1 cup all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup milk
1/2 cup unsalted butter, melted
1 tsp vanilla extract
Optional: vanilla ice cream or whipped cream for serving
Instructions
1. Preheat oven to 375°F (190°C).
2. In a bowl, toss blackberries with 1/2 cup sugar and lemon juice; set aside.
3. In another bowl, whisk together flour, remaining sugar, baking powder, and salt.
4. Stir in milk, melted butter, and vanilla until smooth.
5. Pour batter into a greased 9×9-inch baking dish.
6. Spoon blackberries evenly over the batter — do not stir.
7. Bake for 40–45 minutes until golden brown and bubbly.
8. Cool slightly before serving.
9. Serve warm with vanilla ice cream or whipped cream.
Notes
You can use other berries or mixed fruit for variety.
If using frozen blackberries, don’t thaw them — just increase bake time by 5 minutes.
For extra crunch, sprinkle coarse sugar on top before baking.
Best enjoyed the same day, but leftovers can be reheated in the oven.
