Description

Delightful pastries combining the rich taste of blackberries with the floral aroma of Earl Grey tea in fluffy scone shells filled with creamy goodness.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup unsalted butter, cold and grated
  • 2/3 cup heavy cream (plus 1 tbsp for brushing)
  • 1.5 cups fresh blackberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp Earl Grey tea leaves, finely ground
  • 1 cup heavy whipping cream, chilled
  • 1/2 cup mascarpone cheese
  • 2 tbsp powdered sugar
  • 1 Earl Grey tea bag (steeped in 2 tbsp hot cream, then cooled)
  • 1/2 cup blackberry jam, strained
  • Dried cornflowers (optional)
  • Extra dusting of powdered sugar (optional)
  • Fresh blackberries (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. In a large mixing bowl, whisk together the flour, 1/4 cup sugar, baking powder, and sea salt.
  4. Cut in the cold grated butter until the mixture resembles coarse crumbs. Stir in the heavy cream until a soft dough forms.
  5. Roll the dough into 2-inch balls, place them on the baking sheet, and flatten slightly. Brush the tops with cream.
  6. Bake for 15-18 minutes until golden brown; let cool on a wire rack.
  7. In a small saucepan, combine blackberries, 1/4 cup sugar, lemon juice, and Earl Grey leaves. Simmer for about 10 minutes until thickened.
  8. In a cool bowl, beat the heavy whipping cream with mascarpone cheese, powdered sugar, and the cooled Earl Grey cream until stiff peaks form.
  9. Once cooled, core the scone shells and fill with blackberry jam and Earl Grey cream.
  10. Top and drizzle with cooled blackberry compote.
  11. Chill for 30 minutes, then garnish with fresh blackberries and cornflowers before serving.

Notes

Serve with a cup of Earl Grey tea for an elevated experience. Store leftovers in an airtight container in the refrigerator for up to three days.
