Description

A delightful flatbread combining savory brie and sweet blueberries, topped with homemade rosemary honey.


Ingredients

  • 2 store-bought flatbreads or naan
  • 1 tablespoon olive oil
  • 68 oz brie, sliced (rind optional)
  • 1 cup fresh blueberries
  • 1/4 small red onion, thinly sliced
  • 1 tablespoon fresh rosemary, chopped
  • 3 tablespoons honey
  • 1/2 teaspoon finely chopped rosemary
  • 1/2 teaspoon lemon zest
  • Extra lemon zest for finishing
  • Flaky sea salt for finishing
  • Fresh cracked black pepper for finishing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brush flatbreads with olive oil.
  3. Arrange brie slices evenly over the flatbreads.
  4. Scatter fresh blueberries over the brie slices.
  5. Add thin slices of red onion on top of the blueberries.
  6. Bake for 10 to 12 minutes until brie melts and edges are crispy.
  7. Warm honey in a saucepan and stir in chopped rosemary and lemon zest.
  8. Drizzle rosemary honey over the baked flatbread.
  9. Sprinkle with extra lemon zest, flaky sea salt, and cracked black pepper.
  10. Slice into pieces and serve immediately.

Notes

Store leftovers in an airtight container for up to 2-3 days. Reheat in a preheated oven for best results.
