A protein-packed, lightly sweetened breakfast bake made with cottage cheese, oats, and juicy blueberries perfect for a wholesome start to your day or a make-ahead meal prep option.
Ingredients
1 cup cottage cheese
2 large eggs
1/4 cup maple syrup or honey
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
1 cup rolled oats
1 tsp baking powder
1 cup fresh or frozen blueberries
1 tbsp melted butter or coconut oil
Instructions
1. Preheat oven to 350°F (175°C) and grease a small baking dish.
2. In a medium bowl, whisk together cottage cheese, eggs, maple syrup, vanilla, cinnamon, and salt.
3. Add rolled oats and baking powder; stir until combined.
4. Gently fold in the blueberries.
5. Pour the mixture into the prepared baking dish and drizzle with melted butter.
6. Bake for 30–35 minutes, until golden on top and set in the center.
7. Let cool slightly before slicing and serving.
8. Optional: Top with extra cottage cheese, fresh blueberries, or a drizzle of honey.
Notes
Use frozen blueberries without thawing to prevent excess moisture.
Can be refrigerated for up to 4 days — reheat in the microwave or enjoy cold.
