Ingredients
1 cup cottage cheese (low-fat or full-fat)
½ cup fresh or frozen blueberries (plus extra for topping)
2–3 tsp honey, maple syrup, or agave (adjust to taste)
½ tsp vanilla extract
Optional toppings: granola, chia seeds, mint leaves, or extra blueberries
Instructions
1. In a blender or food processor, combine cottage cheese, blueberries, honey, and vanilla extract.
2. Blend until smooth and creamy, about 1–2 minutes.
3. For a firmer mousse, transfer to serving bowls or jars and refrigerate for 30–60 minutes.
4. Spoon the mousse into bowls or glasses.
5. Top with extra blueberries, granola, or chia seeds if desired.
Notes
You can adjust the sweetness by adding more or less honey.
For extra creaminess, blend in a spoonful of Greek yogurt or a splash of milk.
