Description
Soft, moist, and bursting with juicy blueberries and creamy pockets of sweetened cream cheese this blueberry cream cheese bread is perfect for breakfast, brunch, or dessert.
Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup milk
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup fresh or frozen blueberries (tossed in 1 tbsp flour)
Cream Cheese Layer:
4 oz cream cheese, softened
1/4 cup granulated sugar
1 egg yolk
1/2 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
2. In a large bowl, cream together butter and sugar until light and fluffy.
3. Beat in eggs and vanilla, then mix in milk until smooth.
4. In a separate bowl, whisk together flour, baking powder, and salt.
5. Add dry ingredients to wet mixture and stir just until combined.
6. Gently fold in floured blueberries.
7. In another bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
8. Pour half the bread batter into the loaf pan, spread cream cheese mixture evenly on top, then cover with remaining batter.
9. Bake for 55–60 minutes or until a toothpick inserted in the center comes out clean.
10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For an extra burst of flavor, add a lemon zest to the batter.
Use frozen blueberries directly from the freezer (no thawing needed).
Store leftovers in the refrigerator for up to 4 days or freeze slices for up to 3 months.
Serve slightly warm or toasted with a pat of butter or drizzle of icing.
