Description

Delightful yogurt bites featuring creamy Greek yogurt and sweet blueberries, perfect for a nutritious snack or treat.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. In a saucepan over medium heat, add blueberries, honey (or maple syrup), and lemon juice, simmer for about 5 minutes until blueberries soften.
  2. If desired, dissolve cornstarch in water and stir into the mixture, cook for another minute, then cool completely.
  3. In a separate bowl, mix Greek yogurt with vanilla extract until smooth, adjusting sweetness as preferred.
  4. Spoon yogurt mixture into silicone molds, fill three-quarters full and top with blueberry compote.
  5. Use a toothpick to swirl the compote into the yogurt.
  6. Freeze for at least 3 hours until solid, then store in an airtight container in the freezer.

Notes

For best texture, allow bites to sit at room temperature for 2-3 minutes before enjoying. These bites can be customized with different fruits and toppings.
