Description
Juicy chicken breasts pan-seared to perfection and glazed with a sweet and savory blueberry-thyme sauce an elegant yet simple dinner bursting with fresh, herby flavor.
Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
1 cup fresh blueberries
2 tbsp honey
1/4 cup balsamic vinegar
1/2 cup chicken broth
1 tbsp fresh thyme leaves (plus extra for garnish)
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Season chicken breasts with salt and pepper.
2. In a large skillet, heat olive oil and butter over medium-high heat.
3. Add chicken breasts and sear for 4–5 minutes per side until golden brown and cooked through; remove and set aside.
4. In the same skillet, add blueberries, honey, balsamic vinegar, chicken broth, and thyme.
5. Simmer for 5–7 minutes, gently pressing some blueberries to release their juices.
6. Return chicken to the skillet, spooning sauce over the top.
7. Simmer for 2 more minutes to coat evenly.
8. Garnish with fresh thyme and serve warm.
Notes
Serve with mashed potatoes, wild rice, or roasted vegetables.
Frozen blueberries can be used — just cook slightly longer to thicken the sauce.
For extra depth, add a splash of red wine or a pinch of garlic powder to the glaze.
