Description

This Honey Peach Roasted Salmon is a deliciously tender dish with a natural peach glaze. Sweet, tangy, and perfectly balanced it’s an alcohol-free twist on the classic bourbon-glazed salmon!


Ingredients

Scale

For the Salmon:

4 salmon fillets (about 6 oz each, skin on)

Salt and black pepper, to taste

1 tbsp olive oil

For the Honey Peach Glaze:

2 ripe peaches, peeled and diced (or 1 cup frozen, thawed)

¼ cup apple juice or white grape juice (bourbon substitute)

2 tbsp honey or maple syrup

1 tbsp brown sugar

1 tbsp soy sauce

1 tbsp Dijon mustard

1 tsp apple cider vinegar

1 clove garlic, minced

½ tsp crushed red pepper flakes (optional)

1 tsp fresh thyme or rosemary (optional)


Instructions

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

2. In a small saucepan, combine peaches, apple juice, honey, brown sugar, soy sauce, Dijon mustard, vinegar, garlic, and red pepper flakes.

3. Bring to a gentle boil over medium heat, then reduce to low and simmer 8–10 minutes until peaches soften and the sauce thickens.

4. Blend the glaze if you prefer it smoother, then simmer for 2–3 more minutes until syrupy.

5. Pat salmon fillets dry with paper towels. Brush with olive oil and season with salt and pepper.

6. Place salmon on the prepared baking sheet and brush each fillet generously with the glaze.

7. Roast for 12–15 minutes or until salmon flakes easily with a fork.

8. Optional: Broil for 1–2 minutes at the end to caramelize the glaze.

9. Serve warm with extra glaze and garnish with peach slices or fresh herbs.

Notes

Tips:

– Substitute maple syrup for honey if you prefer a deeper flavor.

– For an extra glossy glaze, brush more sauce over the salmon halfway through baking.

– Serve with roasted vegetables, jasmine rice, or a green salad.
