Ingredients

2 large sweet potatoes

1/2 lb ground beef (85/15)

2 large eggs

1 tbsp olive oil

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/4 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

1/2 avocado, sliced

2 tbsp chopped cilantro (optional)


Instructions

1. Preheat oven to 400°F. Pierce sweet potatoes with a fork and roast for 45–55 minutes until fork-tender.

2. In a skillet, heat olive oil over medium-high heat. Add ground beef, smoked paprika, cumin, garlic powder, salt, and pepper. Cook for 7–9 minutes until browned.

3. In another pan, scramble eggs until softly set.

4. Slice sweet potatoes open lengthwise and fluff insides with a fork.

5. Top each potato with ground beef, scrambled eggs, avocado, and chopped cilantro.

6. Serve hot and enjoy immediately!

Roast sweet potatoes ahead for faster weekday meals.
