Description
A crisp, colorful broccoli cranberry salad tossed with smoky bacon, crunchy sunflower seeds, and a creamy sweet-tangy dressing the perfect make-ahead side for picnics or potlucks.
Ingredients
5 cups fresh broccoli florets, chopped
1/2 cup dried cranberries
1/2 cup sunflower seeds
1/2 small red onion, finely diced
6 slices bacon, cooked and crumbled
3/4 cup shredded cheddar cheese
1 cup mayonnaise
2 tbsp apple cider vinegar
3 tbsp honey (or sugar)
Salt and pepper to taste
Instructions
1. In a large bowl, combine chopped broccoli, cranberries, sunflower seeds, red onion, bacon, and cheddar cheese.
2. In a small mixing bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
3. Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
4. Refrigerate for at least 30 minutes to allow the flavors to meld.
5. Before serving, give the salad a quick toss and adjust seasoning if needed.
Notes
For a lighter version, use Greek yogurt instead of mayonnaise.
Add diced apples or raisins for extra sweetness.
This salad tastes even better the next day after chilling overnight.
