This Savory Burrata & Roasted Tomato Toast is an easy, gourmet-inspired dish that tastes like summer on a slice of bread. Creamy burrata meets juicy roasted cherry tomatoes, fresh basil, and a drizzle of olive oil perfect for brunch, lunch, or a quick elegant snack.
Ingredients
2 slices crusty sourdough or ciabatta bread
1 ball burrata cheese (about 4 oz)
1 cup cherry tomatoes, halved
1 tbsp olive oil (plus extra for drizzling)
1/2 tsp balsamic vinegar (optional)
1/4 tsp salt
1/4 tsp black pepper
1 clove garlic, halved
Fresh basil leaves, for garnish
Crushed red pepper flakes (optional)
Instructions
1. Preheat the oven to 400°F (200°C).
2. Toss the cherry tomatoes with olive oil, salt, and pepper on a baking sheet.
3. Roast for 15–20 minutes, until tomatoes are soft and slightly caramelized.
4. Toast the bread slices until golden and crisp.
5. Rub the cut side of garlic on the warm toast for extra flavor.
6. Gently tear the burrata and place on top of each toast slice.
7. Spoon the roasted tomatoes over the burrata.
8. Drizzle with olive oil and a touch of balsamic vinegar, if desired.
9. Garnish with basil and crushed red pepper flakes. Serve immediately.
Notes
For extra flavor, roast the tomatoes with a few sprigs of thyme.
Add a layer of pesto before the burrata for an herby twist.
Use burrata at room temperature for the creamiest texture.
Excellent paired with a glass of chilled rosé or sparkling water with lemon.
