Description

Marry Me Butter Beans is a rich, creamy vegetarian dish featuring tender butter beans simmered in a sun-dried tomato and Parmesan cream sauce  so good it’s love at first bite!


Ingredients

2 cans (15 oz each) butter beans, drained and rinsed

1 tbsp olive oil

3 cloves garlic, minced

½ cup sun-dried tomatoes, chopped

1 tsp red pepper flakes (optional)

1 cup heavy cream

½ cup grated Parmesan cheese

½ cup vegetable broth

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish


Instructions

1. In a skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.

2. Stir in sun-dried tomatoes, red pepper flakes, and Italian seasoning. Cook for another minute.

3. Pour in heavy cream and vegetable broth. Bring to a gentle simmer, then stir in Parmesan until smooth.

4. Stir in butter beans and simmer for 5–7 minutes, letting them absorb the flavors. Season with salt and pepper.

5. Top with fresh basil and extra Parmesan. Serve with crusty bread, over rice, or alongside roasted veggies.

Notes

Swap heavy cream for coconut cream to make it dairy-free.

Add sautéed spinach or mushrooms for extra flavor.
