Ingredients
1 tbsp olive oil
1 medium onion, diced
2 garlic cloves, minced
2 carrots, sliced
2 celery stalks, chopped
1/2 head green cabbage, chopped
1 (14.5 oz) can diced tomatoes
6 cups vegetable or chicken broth
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1/2 tsp dried thyme
1 bay leaf
1 tbsp tomato paste (optional)
Chopped parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery; sauté for 5 minutes until softened.
3. Stir in garlic and cook for another 30 seconds until fragrant.
4. Add chopped cabbage, diced tomatoes, broth, salt, pepper, paprika, thyme, bay leaf, and tomato paste.
5. Bring to a boil, then reduce heat and simmer for 25–30 minutes until cabbage is tender.
6. Remove the bay leaf and adjust seasoning as needed.
7. Serve hot, garnished with fresh parsley.
Notes
Add cooked ground turkey or sausage for extra protein.
Use vegetable broth to keep it vegan-friendly.
