Description
A smoky, rustic one-pan egg and tomato dish cooked over the fire.
Ingredients
2 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 can (14 oz) diced tomatoes
1 tsp cumin
1 tsp smoked paprika
Salt & pepper to taste
4 fresh eggs
Fresh parsley for garnish
Instructions
1. Heat oil in cast-iron skillet over campfire.
2. Sauté onion, garlic, and bell pepper until softened.
3. Add tomatoes and spices, simmer until thickened.
4. Make small wells and crack eggs into sauce.
5. Cover and cook until eggs are just set.
6. Remove from heat, garnish with parsley, and serve hot.
Notes
Best enjoyed fresh.
Use canned tomatoes for convenience.
Adjust spice level to taste.
