Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
4 slices fresh mozzarella cheese
2 medium tomatoes, sliced
1/4 cup fresh basil leaves
2 tbsp balsamic glaze or reduction
Instructions
1. Season chicken with salt, pepper, and Italian seasoning.
2. Heat olive oil in a large skillet over medium heat.
3. Add chicken and cook 6–7 minutes per side or until golden and cooked through.
4. Top each piece with a slice of mozzarella and cover the skillet to melt the cheese.
5. Add tomato slices and fresh basil on top of the melted cheese.
6. Drizzle with balsamic glaze before serving.
7. Serve with pasta, salad, or roasted vegetables for a complete meal.
Notes
Make your own balsamic glaze by simmering balsamic vinegar until thickened.
For extra flavor, marinate the chicken in olive oil and herbs before cooking.
Use cherry tomatoes if you prefer smaller, sweeter bites.
