Instructions
- Gather your equipment: You will need a food processor, a mixing spoon, and a tray or plate for resting the balls.
- Prepare your ingredients: Ensure that your medjool dates are pitted and chopped for easier blending. Measure out all the remaining ingredients, including the shredded carrots, walnut pieces, chia seeds, and spices.
- Blend the ingredients: Add all the measured ingredients into the food processor. This includes the dates, shredded carrots, walnuts, chia seeds, unsweetened coconut, cinnamon, nutmeg, salt, and vanilla extract.
- Pulse until combined: Secure the lid on your food processor and pulse the ingredients until they begin to form a cohesive mixture. This should take about 20-30 seconds, depending on your processor’s strength.
- Form the energy balls: Once your mixture is ready, take a spoon and scoop out a portion of the dough. Using your hands, roll the dough into small balls, about 1 inch in diameter.
- Coat with coconut: Prepare a clean plate with the extra shredded coconut for rolling. Take each ball and gently roll it in the shredded coconut until fully coated.
- Chill and firm up: Place the energy balls on a tray and put them in the fridge. Allow them to chill for at least one hour.
