Ingredients

  • Extra 1/2 cup shredded coconut for rolling

Instructions

  1. Gather your equipment: You will need a food processor, a mixing spoon, and a tray or plate for resting the balls.
  2. Prepare your ingredients: Ensure that your medjool dates are pitted and chopped for easier blending. Measure out all the remaining ingredients, including the shredded carrots, walnut pieces, chia seeds, and spices.
  3. Blend the ingredients: Add all the measured ingredients into the food processor. This includes the dates, shredded carrots, walnuts, chia seeds, unsweetened coconut, cinnamon, nutmeg, salt, and vanilla extract.
  4. Pulse until combined: Secure the lid on your food processor and pulse the ingredients until they begin to form a cohesive mixture. This should take about 20-30 seconds, depending on your processor’s strength.
  5. Form the energy balls: Once your mixture is ready, take a spoon and scoop out a portion of the dough. Using your hands, roll the dough into small balls, about 1 inch in diameter.
  6. Coat with coconut: Prepare a clean plate with the extra shredded coconut for rolling. Take each ball and gently roll it in the shredded coconut until fully coated.
  7. Chill and firm up: Place the energy balls on a tray and put them in the fridge. Allow them to chill for at least one hour.
