  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pan by greasing a 15×10-inch jelly roll pan and lining the bottom with parchment paper.
  3. Mix the dry ingredients: combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  4. Mix the wet ingredients: beat the eggs and sugar until thick and pale, then add grated carrots, oil, and vanilla.
  5. Combine the wet and dry ingredients gently, careful not to overmix.
  6. Bake the batter in the prepared pan for 13-15 minutes until springy.
  7. Roll the cake immediately in the parchment and let cool completely.
  8. Make the filling: beat cream cheese and butter, then add powdered sugar and vanilla.
  9. Assemble the roll by spreading the filling on the cooled cake and rolling it back up.
  10. Chill the cake for at least 30 minutes.
