- 1 cup powdered sugar

Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the pan by greasing a 15×10-inch jelly roll pan and lining the bottom with parchment paper.
- Mix the dry ingredients: combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Mix the wet ingredients: beat the eggs and sugar until thick and pale, then add grated carrots, oil, and vanilla.
- Combine the wet and dry ingredients gently, careful not to overmix.
- Bake the batter in the prepared pan for 13-15 minutes until springy.
- Roll the cake immediately in the parchment and let cool completely.
- Make the filling: beat cream cheese and butter, then add powdered sugar and vanilla.
- Assemble the roll by spreading the filling on the cooled cake and rolling it back up.
- Chill the cake for at least 30 minutes.
