Description
A quick, fresh, and sweet carrot raisin salad perfect for picnics, lunches, and sides.
Ingredients

3 cups shredded carrots
1 cup raisins
1/2 cup Greek yogurt
2 tbsp honey
1 tbsp lemon juice
Salt & pepper to taste
Instructions
1. Wash, peel, and shred carrots.
2. Place carrots and raisins in a mixing bowl.
3. Whisk yogurt, honey, and lemon juice in a small bowl.
4. Pour dressing over carrots and raisins.
5. Toss until well combined.
6. Serve immediately or chill for 5 minutes.
Notes
For extra sweetness, add chopped pineapple.
For vegan version, use coconut yogurt and maple syrup.
