Description
A healthy twist on classic Mexican chilaquiles made with roasted cauliflower, salsa, and fresh toppings.
Ingredients
1 medium cauliflower, cut into florets
2 tbsp olive oil
2 cloves garlic, minced
1/2 tsp cumin
Salt & pepper
2 cups salsa verde
1/2 cup shredded cheese
Fresh cilantro, lime wedges
Instructions
1. Preheat oven to 400°F (200°C).
2. Toss cauliflower with oil, garlic, cumin, salt, and pepper.
3. Roast 20 minutes until golden.
4. Warm salsa in a skillet.
5. Add roasted cauliflower, toss to coat.
6. Top with cheese, cilantro, and lime juice.
7. Serve immediately.
Notes
Make vegan by using dairy-free cheese.
Add eggs for a breakfast version.
Store leftovers in the fridge up to 3 days.
