16 oz (450g) cream cheese, softened

3/4 cup sugar

2 large eggs

1 cup sour cream

6 oz dark chocolate, melted and slightly cooled

1 tsp vanilla extract

For the cherry layer:

1 1/2 cups cherry pie filling or homemade cherry compote

For topping:

1 cup heavy cream

2 tbsp powdered sugar

1/2 tsp vanilla extract

Chocolate shavings and fresh cherries for garnish


Instructions

1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.

2. In a bowl, combine chocolate cookie crumbs, melted butter, and sugar; press firmly into the bottom of the pan.

3. Bake for 10 minutes, then let cool.

4. In a large bowl, beat cream cheese and sugar until smooth.

5. Add eggs one at a time, mixing just until combined.

6. Mix in sour cream, melted chocolate, and vanilla until fully incorporated.

7. Pour batter over the cooled crust and smooth the top.

8. Bake for 50–55 minutes or until the center is just set with a slight wobble.

9. Turn off oven, crack door open, and let cheesecake cool inside for 1 hour.

10. Remove and chill in the refrigerator for at least 4 hours or overnight.

11. Spread cherry filling over the cooled cheesecake.

12. Whip heavy cream with powdered sugar and vanilla until soft peaks form.

13. Top the cheesecake with whipped cream, chocolate shavings, and fresh cherries before serving.

Notes

For a deeper chocolate flavor, use bittersweet chocolate (70% cocoa).

You can substitute the cherry layer with raspberry compote for a tangy twist.
