Description
Creamy, cheesy chicken enchiladas baked to golden perfection.
Ingredients
2 cups cooked shredded chicken
2 cups shredded cheese (cheddar/monterey jack)
8 flour tortillas
2 tbsp butter
2 tbsp flour
2 cups chicken broth
1 cup sour cream
1 tsp cumin
1 tsp garlic powder
Salt and pepper to taste
Instructions
1. Preheat oven to 350°F (175°C).
2. Make sauce: melt butter, whisk in flour, add broth, and simmer until thick. Stir in sour cream and seasonings.
3. Fill tortillas with chicken, cheese, and sauce. Roll and place in dish.
4. Top with remaining sauce and cheese.
5. Bake 25–30 minutes until golden and bubbly.
6. Rest for 5 minutes before serving.
Notes
Use rotisserie chicken for convenience.
Add jalapeños for spice.
Store leftovers up to 3 days.
