- 3 cups fresh cherries, pitted and chopped
- 1 tbsp lemon juice
- 1–2 chipotle peppers in adobo, finely minced
- 1 tsp adobo sauce
- 1/4 tsp smoked paprika
- 1 1/2 cups granulated sugar
- 1 tbsp apple cider vinegar
Instructions
- Prepare the cherries: Start by washing and pitting your cherries. Chop them up into small pieces.
- Combine ingredients in a saucepan: Place the chopped cherries in a large saucepan. Add the lemon juice and stir gently to combine.
- Mix in the sugar: Sprinkle the granulated sugar over the cherries evenly. Stir until the sugar starts to dissolve.
- Heat the mixture: Turn the heat to medium and keep stirring gently.
- Add chipotle and spices: Once boiling, add the minced chipotle peppers and the adobo sauce, and sprinkle in the smoked paprika.
- Bring to a gentle boil: Allow the mixture to reach a gentle boil.
- Simmer for thickness: Reduce heat and let it simmer for about 20–25 minutes, stirring frequently.
- Finish with apple cider vinegar: Add the apple cider vinegar and stir well.
- Test for consistency: Check if the jam coats the back of a spoon.
- Jar up the jam: Pour into sterilized jars while still hot and cap once cooled.
- Cool completely: Let jars cool at room temperature for a few hours.
