Description
A light, custard-like French dessert loaded with sweet cherries, this 45-minute cherry clafoutis is simple, elegant, and perfect for any occasion.
Ingredients
2 cups fresh or thawed pitted cherries
1 cup whole milk (or almond milk)
3 large eggs
1/2 cup granulated sugar
1/3 cup all-purpose flour (or gluten-free blend)
1 tsp vanilla extract
Pinch of salt
1 tbsp unsalted butter or vegan butter (for greasing)
Powdered sugar for dusting (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9-inch tart or pie dish with butter.
2. Whisk together eggs, sugar, and vanilla extract in a large mixing bowl.
3. Gradually mix in the flour and salt until smooth.
4. Slowly add the milk, whisking until the batter is fully combined.
5. Pour the batter into the prepared dish.
6. Evenly scatter cherries across the batter.
7. Bake for 35–40 minutes until the clafoutis is golden and the center is just set.
8. Let cool for 10 minutes.
9. Dust with powdered sugar if desired. Serve warm or at room temperature.
Notes
Use fresh cherries for best flavor, or thaw frozen cherries and drain excess liquid.
You can substitute vanilla with almond extract for a twist.
Store leftovers in the refrigerator for up to 3 days.
Reheat in microwave for 20 seconds or enjoy chilled.
