Instructions
- Preheat the oven to 350°F (175°C).
- Mix the dry ingredients: whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
- Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
- Combine the dry mixture into the wet mixture until just combined.
- Fold in shredded carrots and walnuts for added texture.
- Prepare a baking sheet with parchment paper and drop spoonfuls of dough.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on the baking sheet before transferring to a wire rack and top with frosting.
