Description
A healthy and balanced bowl made with roasted sweet potatoes, seasoned chicken, fresh veggies, and a tangy yogurt dressing. Perfect for meal prep!
Ingredients
2 medium sweet potatoes, diced
2 tbsp olive oil
1 lb chicken breast, diced
1 tsp garlic powder
1 tsp paprika
1/2 tsp cumin
Salt and pepper, to taste
1 cup cooked quinoa or rice
1 cup spinach or mixed greens
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
Yogurt Dressing:
1/2 cup plain Greek yogurt
1 tbsp lemon juice
1 tsp honey
Salt and pepper, to taste
Instructions
1. Preheat oven to 400°F (200°C). Line a baking pan.
2. Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper; roast 25 minutes.
3. Season chicken with garlic powder, paprika, cumin, salt, and pepper.
4. Heat 1 tbsp olive oil in a skillet; cook chicken 6–8 minutes until browned and cooked through.
5. Whisk together yogurt, lemon juice, honey, salt, and pepper to make the dressing.
6. Assemble bowls with quinoa/rice, roasted sweet potatoes, chicken, greens, tomatoes, and onions.
7. Drizzle with yogurt dressing and serve warm.
Notes
