Description
A hearty and comforting Chicken Broccoli Soup made with tender chicken, fresh broccoli florets, and a creamy, flavorful broth perfect for a cozy lunch or light dinner.
Ingredients
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 medium carrots, sliced
2 celery stalks, chopped
1 pound boneless skinless chicken breasts, diced
4 cups low-sodium chicken broth
2 cups water
3 cups broccoli florets
1 cup milk or cream
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 teaspoon paprika
1/2 cup shredded cheddar cheese (optional)
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, garlic, carrots, and celery; sauté for 4–5 minutes until softened.
3. Add diced chicken and cook until no longer pink, about 5 minutes.
4. Pour in chicken broth and water; bring to a gentle boil.
5. Reduce heat and simmer for 10 minutes.
6. Add broccoli florets and cook for another 5–6 minutes until tender.
7. In a small bowl, whisk together milk and flour until smooth.
8. Slowly stir the milk mixture into the soup and simmer until slightly thickened, about 5 minutes.
9. Season with salt, pepper, thyme, and paprika.
10. If desired, stir in shredded cheddar cheese until melted and smooth.
11. Ladle into bowls, garnish with fresh parsley, and serve warm.
Notes
For a lighter version, use skim milk instead of cream.
Add a dash of lemon juice for extra brightness.
Can be made ahead and refrigerated for up to 3 days.
Serve with crusty bread or crackers for a satisfying meal.
