Description
A hearty, family-friendly casserole loaded with tender chicken, rice, beans, corn, and bold Mexican-inspired flavors all baked together with melted cheese for an easy, satisfying dinner.
Ingredients
2 cups cooked chicken, shredded or diced
1 tbsp olive oil
1 small onion, diced
1 bell pepper, diced
2 garlic cloves, minced
1 cup uncooked long-grain rice
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn
1 can (10 oz) diced tomatoes with green chilies
2 cups chicken broth
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp paprika
1 tsp salt
1/2 tsp black pepper
1 1/2 cups shredded Mexican-blend cheese
Fresh cilantro for garnish
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
2. Heat olive oil in a skillet over medium heat and sauté onion and bell pepper until softened.
3. Add garlic and cook for 30 seconds until fragrant.
4. Stir in chili powder, cumin, paprika, salt, and pepper.
5. Add rice, chicken broth, diced tomatoes with chilies, black beans, corn, and cooked chicken; mix well.
6. Transfer mixture to the prepared baking dish and cover tightly with foil.
7. Bake for 40–45 minutes until rice is tender.
8. Remove foil, sprinkle cheese evenly over the top, and bake uncovered for 10 minutes until melted.
9. Let rest for 5 minutes, garnish with cilantro, and serve.
Notes
Serve with sour cream, salsa, or guacamole for extra flavor.
Swap chicken for ground beef or turkey if desired.
