Juicy, flavorful chicken meatballs seasoned with fresh sage, garlic, and Parmesan oven-baked to golden perfection for an easy, protein-packed main or appetizer.
Ingredients
1 lb ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
2 tbsp finely chopped fresh sage (or 1 tsp dried)
2 garlic cloves, minced
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil (for drizzling)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, sage, garlic, onion powder, salt, and pepper.
3. Mix until just combined — do not overwork the mixture.
4. Using a cookie scoop or spoon, form 1 1/2-inch meatballs and place them on the prepared baking sheet.
5. Lightly drizzle or brush the tops with olive oil.
6. Bake for 18–20 minutes, or until golden brown and cooked through (internal temperature 165°F / 74°C).
7. Serve warm with mashed potatoes, over pasta, or with a creamy mustard sauce.
Notes
For added flavor, mix in 1 tablespoon of Dijon mustard or a splash of Worcestershire sauce.
Can be made ahead and frozen — reheat in the oven for a quick meal.
Try serving with brown butter sage sauce or cranberry glaze for a festive twist.
