Ingredients

  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup Asiago cheese, grated
  • 2 tablespoons Dijon mustard
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken thighs with salt and black pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes on each side until golden brown. Remove chicken and set aside.
  3. Melt unsalted butter in the same skillet, add minced garlic, and sauté for 1 minute until fragrant.
  4. Add sliced mushrooms and cook for about 5 minutes until tender and browned.
  5. Stir in the heavy cream, Dijon mustard, and grated Asiago cheese, mixing well until the cheese melts completely.
  6. Return the chicken to the skillet and coat with the creamy sauce.
  7. Lower the heat, simmer for 5-10 minutes to ensure the chicken is cooked through and flavors meld.
  8. Garnish with fresh chopped parsley before serving.
