Description
This Crockpot Chicken Noodle Soup is the ultimate comfort dish hearty, flavorful, and made effortlessly in your slow cooker. Tender chicken, wholesome veggies, and classic egg noodles simmer together in a rich, savory broth for a cozy meal that warms you from the inside out.
Ingredients
1 1/2 lbs boneless, skinless chicken breasts or thighs
8 cups low-sodium chicken broth
3 medium carrots, sliced
3 celery stalks, chopped
1 medium onion, diced
3 garlic cloves, minced
1 tsp salt (or to taste)
1/2 tsp black pepper
1 tsp dried thyme
1 tsp dried parsley
1 bay leaf
8 oz egg noodles (add near the end)
1 tbsp olive oil or butter
Fresh parsley, chopped (for garnish)
Instructions
1. Add the chicken, broth, carrots, celery, onion, garlic, salt, pepper, thyme, parsley, bay leaf, and olive oil to your slow cooker.
2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
3. Remove the chicken, shred it with two forks, and return it to the crockpot.
4. Add the egg noodles and cook for another 20–30 minutes on HIGH, until noodles are soft.
5. Remove bay leaf, taste, and adjust seasoning if needed.
6. Garnish with fresh parsley before serving.
Notes
You can use rotisserie chicken and reduce cook time to 2–3 hours.
For a creamier soup, stir in 1/2 cup of heavy cream or milk after noodles are cooked.
Egg noodles can be swapped with gluten-free or whole-wheat noodles.
Freezes well without noodles — just add fresh pasta when reheating.
